that is an awesome price for what is considered a GREAT cooker. they retail for around $1100-$1200 plus freight which could be another $400 depending on where in the country you are. although i believe that is not a charcoal cooker, it is a stick burner.
if you don't want it pm me i will take...
they were fantastic. 5h 45m i did not care for the cut though. i was under the impression that there would be no cartilage or whatever those white tubes are. and they were still there. i much prefer the baby backs...
first time with st. louis cut. i usually do baby backs for about 4-5 hours. so i figure 5-6 for the st louis cut? i don't foil just straight smoke with water in pan.
there is also a lot of buzz going around about the pitmakers and they have some really nice trailers set up with a grill as well. those are vertical reverse flow. there are not without a learning curve from what i have read. you have to creep the temp up to not overshoot it otherwise damn near...
in your shoes sounds like a lang on a trailer would do just great. and the trailer can be outfitted with a propane grill so you could have a whole mobile cooking setup in one.
you are in the reverse flow forum so you have to decide on wood or charcoal and either horizontal offset or vertical? there are lots of choices out there. what have you used in the past and what did you like and dislike about the borrowed smokers?
you could look for a deal on a 22.5 wsm (i got mine for $320 on sale in december). you cannot cook for 20-30 people all at once on it but you can certainly cook in stages like i do. i will do pork butt a few days before and then heat it up an hour before serving. brisket can get pulled off and...
and i must have missed that one post earlier. Very sorry for your loss and hope that you enjoy every minute of smoking on your, what we can assume will be, AWESOME smoker. and there are companies out there that will do custom paint or you can have a placard made and riveted on the smoker to...
well then lets get started....
what kind of fuel?
are you partial to tending or set and forget?
is this for actual restaurant or just large gatherings?
patio style or on a trailer?
do you like to cook with water?
are you a low and slow or hot and fast cook?
that should cover the basics on...
do a lot of research buy just a bit bigger then you think you need and then buy once and cry once, meaning buy good stuff that will work well and last a long time.
yeah, ideally i would love a lang stick burner but i don't know where to get that much quality wood and/or how to properly store it. i think if i got a stick burner my problem would be fuel.
i just really like the idea of shelves/racks you can easily get to all your food. and i actually cheat...
well after reading more the pitmaker seems to have it's issues too. it seems to always cook hot and is extremely difficult to get down once it has passed the desired temp. also seems like the small amount of fuel runs out quickly.
i'm on a WSM too and i hate using the bottom rack because it is a PITA. so i basically use the WSM as a single rack smoker. which limits me on what/how much i can smoke. i don't need a huge smoker but if i am going to bite the bullet and buy one i am going to get a good and big one. i like the...
i've been looking at all of them. backwoods, stumps, pitmaker, superior, spicewine and so on. but quality & size vs price makes me lean towards pitmaker.
if i were to find a good unit used at a good price i would take any of them. but if i am going to shell out for a new unit i want it to be...
you can run the therm under the lid or make a grommet hole.
with your new smoker i would remove the therm off the lid and dip the tip in boiling water this will let you know how far off the therm is from real temp, then put it back in. (mine reads 10 degrees cold and a replacement i had gotten...
i'm still shopping for a cabinet smoker and this one seems to fit my bill better than others. ideally i would like a gravity feed system for convenience but this looks like a fantastic smoker.
any pros/cons you can tell me? if i am going to spend this much on a smoker i only want to do it once....
i have had terrible luck with my guru and rain have been through 3 of them already. i once saw a picture of a plastic box with some pvc fittings on one end for the wires.
can i see some pics or ideas for this i would like to save my newest controller from damage.
