I was trying to thank Dutch for a question I had about his beans. When I hit submit it jumps to the top of the page but it doesn't actually commit the action.
So anyhow. Thanks Dutch!
Hey Jim,
I have that same grill and love it. I assume it has the flip up grate. That makes things way easier for adding charcoal and chips. Get yourself a small aluminum disposable mini loaf pan and fill it with water, beer, whatever and place it over the coals when doing indirect cooking. ...
I'm catering a little party tomorrow. I've got a brisket and butt on now. Tomorrow I'll be doing Dutch's Wicked Baked Beans and a dozen sausages. May have to thow on a fatty for lunch for myself
Welcome.
What kind of smoker are you using? I just put about 18lbs into my WSM with a chimey of it lit so it'll run all day.

Could be what Al said. Could also be a bone in. If its bone in, iI leave it intact. I think the bone adds some flavor. If not you can cut it in half. Probably won't change the cook time a whole lot, but you will get more smoke penetration.
Good luck and don't forget the qview.
A couple of their sauces are pretty good. I like the Georgia Mustard. And yes they have them all in big squeeze bottles at the table. I tend to mix a couple together. I eat lunch there every once in a while. It's not bad and cures that craving to tide you over til you can do your own. Check...
