    PS. Temp is usually controlled with air flow.  Not necessarily the kind of charcoal you're using.  But I need some more info on what all you're using.

    Could be what Al said. Could also be a bone in. If its bone in, iI leave it intact. I think the bone adds some flavor. If not you can cut it in half. Probably won't change the cook time a whole lot, but you will get more smoke penetration. Good luck and don't forget the qview.
