    Like Steve is saying, sounds like a moisture issue. The containers you are using could be holding moisture after you clean them. You could try using silica gel packs to see if that helps.. https://tinyurl.com/y52yv97h or go old school and put some rice in the bottle.

    So this turned out really well. Cheaper than buying by the pound and much better flavor. I thought I should have injected but didnt need it. After done rested for an hour to cool. Chilled over night. Sliced with fillet knife. Used Meat Church Holy Gospel BBQ Rub

    I have found a fillet knife works best. I am able to get pretty thin slices with my bacon. Meat needs to be cold and wipe blade every so often.

    Thanks for the ideas! I will try. I noticed the pin looked a bit bent.. not binding up opens smoothly... but I can hear the door hit metal on the bottom, however if I lift up on door handle and close don't.
