Harvard meats over on 15th & Harvard has some really good beef ribs, nice and meaty. They cook up thick after the meat shrinks and balls up. You can get racks there 4-5 bones @ 5.99/lb.
If you used the 3-2-1 for spares I find that's too long and results in an over tender rib. This happens especially at higher cooking temps and temperatures swings during the cook, try to stay around 225F. I've been having luck with a 3-1-1 method for my spares, but I find it a real pain to...

3 racks of baby backs, one naked w/S&P only, some ABT's and smoked jerk chicken wings. Throwing a pan of Dutch's beans on the smoker as well, going to blow some peoples minds with those!
