Great job and great pictorial. I've smoked many a brisket and I never have seared one. My results are always good. But, I just might have to try searing one now. Looks awesome!
Tell you what is good in the water pan. I do this with anything but chicken. About an hour or less before the meat is done I'll drop ears of corn or whole potatos in. Just think all the flavor that has dripped in the pan from your meat. They come out awsome.
CFM is the manufacturer of your unit. They have hit hard times and getting them to replace your faulty hose might be a problem. So what others have sugested, buy replacement hose at Lowes or Home Depot, may be the only way to go. By the way, it seams this is a comon problem lately with GOSM...
