Looks might fine I have one of those racks but haven't used it much. How many were you feeding? I always see all this great food but when i cook it's usually for two (more like 1.25 wife doesn't eat much at all-cottage cheese, etc)
Great effort first batch! I like just a bit of heat too-I noticed the ones with the little lines & wrinkles are hotter, maybe aged more? Also read soaking in water will cool them off but they aren't really hot on the pepper scale compared to some others. They do disappear fast!
Sorry I missed your message yes we stuffed them first & frose a bunch about 15 lbs altogether. Haven't brined yet. Doing some more today. And turkey breast bone in.

I was looking for something too and saw this carport from Lowes but it is about $1,000. They have free standing ones too. It is very windy here in OK-was looking for something sturdy.
We are making sausages, have 2 butts ready to grind up. Saw an interesting deal on DDD last Sunday making jalapeno sausages wrapped in corn husks, going to experiment with that. Of course wings.
