Congrats on your smoke & if it tasted good it was a success. Sometimes hard to remember the camera, and yes it disappears fast! I have a lot of prep pics w/o the finished product to show for it.
Next time have a little something just for the chef hid in the smoker someplace. Hard to work when...
Good for you more planning time. A variety of choices is always good, some like one thing & some another. How many are coming? Leftovers usually are not a problem around here
I have better luck with chips in my 30" but you can experiment. We have pecan trees and I had good luck yesterday with small pieces & twigs.
The heater isn't very big in the 30".
Have to agree with ECT01 plus they have very good customer support IMHO.
Be sure to research the 30" vs. the 40" there are differences. Lots of discussion on this topic here.
Good luck!
You have done a lot of work & a good job figuring all this out. I never thought about measuring the ratio.
We always grind up everything together from a butt when we make sausage, otherwise it seems too dry.
My pan did the same thing & found a pan at Dollar General that fits better (or as good as) than the original. WWorld has some too. Got tired of messing with the foil.
