    I have the same issues.  Somethings to try to help: Take meat out of the fridge and let it warm up some before putting it in.  Maybe an hour outside the fridge. If you're using an extension cord, use as short a one as possible, like 25' max and use one that's 12/3 gauge. Get the door shut...

    Low temp smoking with MES 30

    I recommend the AMNPS and the mailbox mod.  This is a great combination.  You can cold smoke and hot smoke.  On a real cold day, you can smoke butter if you want, not to mention cheese!
