Rust On Outside my Lang Help!!!!!

I would sand/prep as much as possible to get the loose weathered paint off the metal surface and repaint with 1200* paint as it is the firebox and gets very high in temperature. I found some 1200* paint at ACE and Pep Boys when I built the UDS. I am sure any hardware store would have some of the...

    Help on rub needed..

I am always a fan off adding some garlic to my rubs. I use garlic pepper a lot of times that way I dont have to buy Garlic and Pepper seperate. I would try some Cumin and a little Brown Sugar for the offset and a little bit of bark as well. Just my $0.02.

    Resting Question...

Well, all I can say is thank you so much for the help guys. Pulled meat out of the cooler at 9:15, was still too hot to handle. Started pulling at 10:00. Finised pulling at about 10:15 and they swarmed the meat like it was gold. Pretty sure it is safe to say that it was a hit.

    UDS Build(s)...

So I got the smoker done and have cooked on it two times now. WOW...what a difference it makes. I feel like I am doing something wrong with the minimal effort to keep the heat in a set temp range. With my little cheapo verticle water smoker I was hovering over it trying to get the set temp for...

    Resting Question...

Well the cook is finished. (Sorry about the lack of Qview, I dont have a working camera right now). Pulled each piece of shoulder at 202 degrees and then stuck in the oven at about 170 as suggested by ronp (Thanks again Ron). Woke up about 15 minutes earlier and stuffed in the cooler about 5:15...

    Resting Question...

So for clarification, if I leave the shoulders in the oven at about 180 until I get ready to leave in the morning and pack in cooler at that time, they will not cook too far? I am going to pull the shoulders between 202 and 205.

    Resting Question...

The shoulders are about the same size at just over 9 lbs a piece. Found a local butchers that apparently has very large cuts of meat on hand at all times.

    Resting Question...

Because I don't want to pull the meat until about 10 a.m. and when I leave there is still a four and a half out time frame from then. so I need to do the cool anyway and dont want to overcook in the oven. What temp would I have to keep the oven at?

    Resting Question...

My cooler should be alright. I have had ice last in there with beer for two days in havasu in the middle of summer so average of 110 degree weather and still had ice at the end of the trip.

    Resting Question...

I am going to be smoking just under 19 pounds of Shoulder for a work potluck. If I manage to get them done around midnight or so and then double wrap in foil, then towel, then sleeping bag, then into cooler, how long do you think I have before I would have to worry about getting it into a...

    Weber grate on UDS

I am going to be smoking 18.77 lbs of pork shoulder and 9.36 lbs of chicken for a potuck at work. I made a USD a couple of weeks ago and I use the cooking grate off of the Weber 22.5" kettle. I am a little worried about the weight limit of the grate and I was wondering if anybody else has made...

    Lemon Chicken Scallopini w/smoked mushrooms

It is just before 7 in the morning and I am already looking forward to dinner. That looks sooooo good. I love mushrooms, and I love smoke. How can you go wrong there?

    Free, can you beat it?

Have got to love free smoking wood. I happened to go to an apple orchard over the weekend and started talking to the owner. Ended coming home with about 60 lbs of free apple wood that was cut about 8 months ago. Should be just good enough for the turkey for thanksgiving.

    Brick BBQ Pit...

Not sure where to put this since you can use charcoal or wood or whatever fuel really if you wanted to, but I was wondering if any of you have either built or are in the process of building a Brick BBQ Pit in your yard. I am looking at buying a house and want to pretty much build and entire...

    UDS builders/users, got a question...

Just finished my UDS build on Saturday. I used it to cook for the first time on Sunday. I have a cheapo verticle smoker with a water try too, but WOW what a difference. I would use the UDS anyday over the little guy. It was VERY easy to control temps, the fuel lasts for a LONG time and the best...
