Vertical Smoker – use without water pan??

I have both types of cookers and would not recommend using a smaller vertical unit without the water pan if you do not have full air flow control. My small unit from Harbor Freight is honestly, one of the hardest things to turn good Q out of. When I cooked on the UDS for the first time I was...

    Butcher's Twine/String

I am in a pinch. I need some butcher's twine for a smoke tonight, but there are no stores around me that have butcher's twine, but there is a home depot and they do have twine. Is there a drawback to using just standard twine since the temperatures are so low?

What Wood to use for Turkey? Time?

I did a Turkey as a test run a couple of weekends ago and all I used was Apple wood for flavor and coals for heat. Came out really good. Used a honey glaze on the skin and then about halfway through the cook started injecting the honey glaze in the bird as well. Came out extrodinary. Hands down...

    PLEEEASE HELP! pork shoulder

When I asked Ronp about some pulled pork a while ago he told me to just put them in the oven set to 170-180 that way they do not over cook and then pull them in the morning. It was for a potluck at work so I still wrapped them in a cooler but the resulst was amazing. All I used to pull apart was...

What starts in the smoker, stays in the smoker

What if you just need to keep the meat warm and not cook any longer. For example I left a couple of butts in the oven at 175 for a couple of hours while I slept to take them into work for a potluck.
