    hey everybody, I don't know if any of you have tried this , but those mr. clean magic erasers are great for cleaning your probes, where the smoke clings to them it just comes right off, and since you squeeze all the water out of it before you use it , it's basically dry. You all should try it...

    maybe on your next one you could get your meat a little thinner, I try to get a pound to fill about 3/4 of a 9x13 cookie sheet, yours looks a little on the thick side, especially for a kilo. Hope it turns out great.

    How long should smoke last?

    It's always good to put the wood IN something, I use a sawed off coffee can, not the box supplied with the unit, It gets the smoke going faster, and you can put more in it. Some of us use charcoal , ( a lump or two ), as well in our wood boxes, it adds to the smoke ring.

    Thats kinda what I'm leaning towards doing, converting it that is. I've got a small wood stove that I have been looking for a good drum to hack up and make a horizontal, but now I'm thinking that I might put a hole in the back of it and hook up a woodstove to it and see how that works out.

    I have been talking to the owner at a little bbq spot down here where I live and he has replaced his old smoker, and bought a couple more, I asked him what he was going to do with his old one and he said I could work out a deal with him on it. I thought kool, hadnt even seen it till yesterday...

    sure, it wont have as much fat in it as a butt, but she'll smoke, I would foil it a little early , maybe around 145-150 so there is still plenty of juice on the meat, and make sure to throw in some apple juice when you foil it.
