Welcome DuckDawg to the smf. Lots of nice folks on here to answer your questions and give advise. Nice looking dog you have there. I duck hunt in the fall also. Still have a few in the freezer yet. Have to find me a good smokin recipe for them.

Hey Tex...I agree with Rich. The 3-2-1 method of doing ribs will get you good results. The meat temp thermometer is a must have item for smokin. I have two of them and plan on getting another in the near future.
Don't forget to rinse the chickens off after they are brined.
Looking forward to...
LowNSlow...I have the larger version of that exact smoker. I bought mine at Cabella's. Mine measures 16x16x48 and has six racks instead of four. The bottom rack is used to hold your water pan, so this would leave you with three racks to put your meat on. I reckon you would have to decide how...
Welcome to the smf TX. Congrats on getting that first smoke under your belt. You are already learning things to do the next time. As someone has already said, a digital thermometer will definatly help with your smoking process. You will be able to tell the internal temp of the meat which is...

Perry, what a little sweetie you have for a daughter. Thank you for sharing her story with us. I will keep her in my prayers and hope she will continue to improve with time. I raised two daughters and know that little girls are special...especially to their Dads.
My best wishes to you and your...
Hey Dave...I'm glad you stuck with it and tried again with better results. The wind can really be a bugger when you are trying to smoke. I'm sure it is a lot harder with your smoker than with my gas burner. None the less, I have still had trouble with the wind affecting my smoke temps.

As far as trying something different for your next smoke, may I suggest a Fatty or maybe some chicken's. In any case you will be hooked on this smokin thing.

Great thread Tip. I also have to confess to a situation that could have been a bad one. While smoking my first brisket about a month ago, I wanted to add more wood chips to my chip box. I had switched the cast iron box for a 8x8 aluminum cake pan. Not thinking, I removed the cake pan and set it...
Congrats on giving it your best shot. Looking forward to the Q-View. As long as you guys had a good time and learned a few things along the way, it was a sucess.
