    I use my Masterbuilt 860 for 1-2 hour cooks all the time. If charcoal management becomes a problem for me I'll use an oven instead.

    Amazon is pretty easy to deal with as far as returns go. I had it out of the box again today to see if the bad probe was working and now neither probe works. Both are dead. Things happen.

    An off the shelf Lodge works without smoothing. It's the seasoning and care of cleaning in order not to remove the seasoning that makes them non-stick.

    Cooking will season it. I have tried using Crisbee to season but found cooking over time seasoned it just as well. No mine doesn't look like a finely polished race car but does the job and is easy to clean. I found that cleaning it wrong made it very difficult to clean the next time I used it.

    Chicken searing temp

    I have been searing chicken at 700 degrees then backing the heat down to 400 degrees to cook to temp. Nice char on the skin that we like. 700 degrees is death on temperature probes (except Masterbuilts). What's the lowest temp I can go and still get a good sear?
