    Kit comes with an overflow cup. Says to fill to rim, push in cup to fill with liquid, dump, replace cup. Guess that takes liquid down but displacement of the cup brings it back up. Ya Richie, guess theres alot of moisture in the peppers and pineapple that the salt would squeeze out. thanks all

    Man! Thought there was a thread there.That was funny chile. This ferment is blowing through the air lock, if you notice on right side of air lock is cloudy. never had that happen before on previous attempts cept for sourkraut. Guess all will be good. Pineapple, habeneros, pablano, onion...

    Isn't that the best? 30 quarts keeps us till planting time. My grandmother would ALWAYS put a slice of bacon in every quart. Freezing is another option for working folks. Buzzy,I have had better luck in fall the last couple yrs. between deer, rabbits. Fall is wetter than usual anymore.

    Any one ever use this injection

    Big Bob's pork injection: 3/4 c apple juice, 1/2 c water, 1/2 c sugar, 1/4 c salt, 2 tbls. worcestechire. can use all apple juice or 1/2 cup fruity wine. I use all apple juice.. Never have wine laying around. If i use frozen concentrate, I only add 2 water instead of 3. This is killer on butts.

    It reads after initial fermentation, add measured amount of raw apple cider vinegar. You do this to the whole batch in fermenting jar, or after straining and ready to process? Does doing in brine affect the Mother to use for next batch. Thanks. Just a little cornfused. Threw last mother out...
