    Basic brisket/pastrami advice needed

That's what I love about this forum, great advice. Guess I will hold off on the pastrami idea for now and just do a slow smoke starting tomorrow night. Going to rub it down with mustard and dry rub tonight, then a good ten hours on smoke tomorrow night or early Saturday morning, wrap, get...

    Basic brisket/pastrami advice needed

Ok, so I did do the search function and found stuff all over the place but nothing as basic as i guess I am looking for. I have a nice 6lb brisket that I want to make pastrami with for this weekend. What I am looking for is this? Do I need to wet brine overnight with TQ? What is the smoke...

    Hello from Idaho

GnuBee, yes I do tie my own flies. I chose the handle because the GreenDrake is one of my favorite bugs and hatches on the rivers here. You should find your way up the Coeur d'Alene River next trip through, since they changed the regs to year round and only catch and release, we have seen the...

    Shipping smoked salmon help needed

Just a quick question fellas, I imagine it's no big deal at all to just ship it down as is after vacuum sealing it up but my Mom wanted me to send down some smoked salmon for the holidays for her to enjoy and I just finished smoking it up beautifully with a nice brown sugar glaze on it. It is...

    My Fatty Piston

That's awesome. I over simplified mine when I wanted something to pack a fattie into...and just used the open end of my Cabela's jerky shooter, it has the plunger intact and you can pack the tube, stack it and squeeze it out. What a cool invention.

Advice on a new grill needed

Get a Traeger and don't look back. I retired my ten year old Weber, well kind of retired, it. It got so lonely after I bought my Traeger 075 that I put it on Craigslist and sold it off to a fella nearby. My wife is going through her adjustment period as I insist on cooking every meal on the...

    Hello from Idaho

Uh oh, Got14u....a fly fisher who smokes...when did Mom separate us? The river is my church, the bbq the altar and the meal my sacrafice. We are going to have to swap fly fishing stories someday. I fish the Coeur d'Alene, St Joe, Clark fork and once a year a pilgrimage to the Henry's Fork.

    First Abt's

Interesting, may have to try these. My ABT recipe is simple too, just slice the japs lengthwise, seed them, stuff with cream cheese, add a little smokey, wrap in bacon and pack with brown sugar, smoke at 225 for three hours.
