    I have to think that's a matter of personal taste. I prefer a bit of chew, my wife likes fall of the bone. One of the best things about smoking at home is being able to make what you like. Great experiment, thanks for sharing the experience.

    I have a MES 40 with a glass door. After cleaning it a couple of times, I decided it just wasn't worth the effort. I don't spend a lot of time out by the smokers during a cook, except when I have to add chips to the MES, and once the TBS starts to roll, I fly by instruments ( remote thermometers ).

    White pepper is usually found in a much finer grind than black. The black and white mixed together add another layer of flavor in your brisket rub or everyday SPOG.

    I run my MES with the vent wide open. I don't use the water pan, and never soak the chips. Keep the drip pan clean, empty the ash pan after each use.     Great looking bark ! I bought a little 2 gallon shop vac on Amazon for about $30. I vaccum out the burner area after every 3 or 4 cooks, and reverse the hose and blow out the dust at the same time.

    Take your wife ? .....could get scary. We have a bunch of grandkids and they sell kids clothes. If it's just for meat, I go alone. If my wife goes, I always remember to wear comfortable shoes =) Bought a very nice tv last year in a box with a tear in it. Half off. You never know what you might find.

    If you open the package, and drain the liquid, I would suggest you vacuum seal it then freeze it. If you don't have a sealer, the " soda straw in the zip lock " works fairly well for getting most of the air out, and lowering the chance of getting freezer burn.

    Grilling fruit

    Be sure to place the fruit where nothing else had been on the grate for a while. That would give you a clean spot, and a hotter surface. Don't move it around until it has grill marks.
