    Dry pellets?

If they get damp, you can microwave briefly. For my pellet smoker I store them in airtight 5 gallon buckets. I keep a variety of flavors for the A-Maze-N tray for my MES in gallon bags stored in a Rubbermaid Action Packer out on the deck by the smokers.

    Carrying case for therms

Great idea, I would have to buy one locally. I use Amazon a lot but it would be a great excuse to visit the gun shop again instead,

    Dry Baby Backs

You are food safe at 145. The colagens and fats start melting out at about 190. At 200 if they probe tender, I pull them.I am guessing they went ambient on you. They probably reached the temperature in the smoker, and all the fat and juices just bled out. At 225 to 250, it wouldn't take long.

    Something strange is happening.

Seriously, you got it bad. Take a tablespoon of dry rub orally, followed by a cup of BBQ sauce thinned with Jack Daniel's, and get a good night's sleep. When your vision clears, check Craig's list in the morning.

    Something strange is happening.

You could tell him you left them alone in the dark, and look what happened. It is now time to start practicing a surprised expression. You have the onset symptoms of the disease. It seems to be highly contagious to the folks who hang out on this forum. There is no known cure. Enjoy the new toy =)

    Need some assistance

Rub lightly with some vegetable oil. Press your choice of rub into oil coating. I like SPOG with a little dark brown sugar added. Most fruit woods work on pork loin for me. Cook to 150 internal temperature, then cover in foil for 10 to 15 minutes. Should be faintly pink, done to medium. A lot...

    My Daughters Engagement BBQ

It won't matter much. You are cooking by temperature, not time. When they are done, they are done. Relax, enjoy the experience, and graciously accept all the compliments.

Better plan on a few adults wanting to go that way, too.

    My wife's 60th - what to smoke???

Banana boats. Slit a banana open in its peel, load it with chocolate chips, miniature marshmallows, slivered almonds, shredded coconut, and sprinkles. Wrap in foil, warm through, and serve on the foil. Easy clean up, too !

    My wife's 60th - what to smoke???

What is your wife's favorite meal ? You might consider some special dinner she enjoyed before, or something she orders when you go out.

    Free warmer henny penny

This may be a bit simplistic, but can you just turn it over ? Does it have a temperature control ? You may want to talk to someone who has done a similar build about exhaust stack placement. That looks a lot like the proofer we had at the restaurant, and if I remember correctly, the max...

    Stuffed chicken thighs

We love smoked thighs. I take the skin off, scrape the excess fat, season the thigh, then wrap it back in it's own skin, secured with a toothpick. Our family favorites are thighs stuffed with a bsby portobello, which is stuffed with spicy Italian sausage and breadcrumbs, chicken Cordon Bleu...

    Recovering pork ribs?

Strip the meat off the bones, dice it up, and simmer it in a pan with some Coke or Dr. Pepper for 10 or 15 minutes, and serve over plain white rice. Don't ask me why I know this.

When I was growing up down south we heated our house on the occasional very cold day with a kerosene heater. There was always a pot of water on to to keep the humidity up, but never thought of cooking on it. Great way to multitask an appliance. And...that chili looks great !

    Butcher paper question

You could. It is less porous, and works great to steam in. I like it for seafood " en papillote ". It's also going to be a lot more expensive.

    Butcher paper question

The last roll I bought was from Amazon, 24" x 175', FDA approved, for $25.97. The shipping was free. If you order some, get the 24". If it's too wide, fold it in. If it's too narrow, there is not much you can do except fold in a seam. I don't use it much, but was happy with the results. It...
