thanks a lot for the encouragement guys. This is only my second week with my modded smoker (i feel I've done a lot in two weeks heh) and I'm going for 3 racks of baby backs, 2 whole chickens, and one fatty on Saturday.
I'm feeling a bit like I am in over my head, but I've got 3 digital...
So thanks to all the good stuff I have read on these boards I'm trying my first fatty on saturday morning. I don't have any time friday to prepare so I thought I'd give it a shot at rolling it tonight. So I give you... my first fatty go round

From reading on here somewhere it looks like it should take around 2.5 hours to reach temp? Sound right?
(I'm doing this with the 3 racks of ribs, and the chickens)
maybe this is a dumb question but are there any problems with making some fatties a few days before the smoke and storing them in the fridge (wrapped in saran)?
I don't see why this would be a problem, but maybe I'm missing something?
so I bought some gasket rope today. You guys think the best place to put it is on the bottom of the smoke chamber, butted up to the lip? I noticed on my first smoke that most of the leak seemed to be coming from the front of the lid.
my charcoal basket should come Thursday also.. just in time...
thanks for the help guys, I'll take some pictures on saturday. I just made up a batch of Bilbo rub for one of the racks. You think even with all the salt in these rubs I'd be ok with doing the prep/rub the night before?
