    as requested here is me in my new apron. (it looks a little off because the heavy spray bottle is pulling it down on one side. Trust me when I say.. it's prefect and the picture does not do it justice.

    it's a mod to the smoke stack so the smoke actually has to go under the grate before leaving the chamber. I found the idea on these boards :)

    Update Charcoal basket welded and installed still have to put the gasket rope on (not sure of the best placement) and then pretty much done.

    fatty overnight question

    thanks for the help. I'm making something easy for my first one. Bell peppers, cheese, mushrooms. From reading on here somewhere it looks like it should take around 2.5 hours to reach temp? Sound right? (I'm doing this with the 3 racks of ribs, and the chickens)

    maybe this is a dumb question but are there any problems with making some fatties a few days before the smoke and storing them in the fridge (wrapped in saran)? I don't see why this would be a problem, but maybe I'm missing something?

    so I bought some gasket rope today. You guys think the best place to put it is on the bottom of the smoke chamber, butted up to the lip? I noticed on my first smoke that most of the leak seemed to be coming from the front of the lid. my charcoal basket should come Thursday also.. just in time...

    thanks for the help guys, I'll take some pictures on saturday. I just made up a batch of Bilbo rub for one of the racks. You think even with all the salt in these rubs I'd be ok with doing the prep/rub the night before?
