Last week we brined and smoked some Halibut and Tilapia. The brine recipe was this from Bear's post :
Put 1/2 quart of apple juice in a pot on the stove, bringing to low boil & then down to simmer.
Add to this;
6 ounces of soy sauce
1/2 cup of non-iodized salt
1/2 cup of brown sugar
1/2 tsp of...
Thank you for your input.
I just came from Wal Mart. Alaskan Flounder fillets are $4 per pound. Cod is a bit over $4 per pound.
Is Flounder a good fish to smoke ?
Looking for ideas for our next fish smoking session. We really enjoy Halibut but it's pricey, so is Salmon. Tilapia is good, but we'd like to try some different fish. Since we live in small town Iowa ,USA we have a Wal Mart, HyVee, and Fareway. Costco and the other big stores are 90 minutes...
Forgive me if this has been answered already. Is there any reason we can't eat the smoked tilapia fillets the same day as smoking them ? We're gonna try this recipe tomorrow.
What can be done with overcooked and dry meat ? Beef, pork, chicken, I've made it all hard to chew at one time or other. Can anything be done to re-moisten it ? What are your favorite ways of making overcooked meat appetizing again ? Thanks in advance.
Thanks everyone for your input ! We smoked two racks of loin back ribs using the 3-2-1 method and we were very pleased with the results. Brushed them lightly with yellow mustard, added a dry rub of brown sugar, onion poweder, garlic powder, salt and pepper, wrapped in plastic and in the fridge...
I've been watching videos about soaking a whole turkey in cold saltwater overnight (Alton Brown method) and the science behind it says it will be the most juicy bird you've ever eaten. 6 quarts water, 1# kosher salt, 1# brown sugar. Would this be a good brine and method for any poultry (and...
This will be our first attempt at smoking pork ribs on our new MES 30". Our local store only had "loin back" ribs.
1) Are loin back ribs a cross between baby backs and spare ribs ?
2) Is there a membrane on these loin backs that needs to be removed ?
3) These were on sale for $3.99 per...
Looks like good stuff. Someday I will have to buy smoking wood too.
When I was using my Brinkman charcoal smoker and I needed smoking wood, I would grab the lopers and walk through my sister's hardwood timber and trim branches off of younger hickory trees. Fresh hickory with the bark on has a...
My mother made beef tongue when we were kids... we raised cattle and took a fat steer to the locker each year. She cooked it most of the day in the pressure-cooker and sliced it for sandwiches. That's all I remember, dad quit raising cattle when I was pretty young. But I do remember it made...
That stinks. I don't recall for sure, but we may have purchased the last one at our store. We weren't' 100% committed to buying the Foodsaver but while we were looking at them someone came along to buy bags for theirs. After chatting with them for a few minutes we decided it would work for our...
Here in southern Iowa there is a tree that grows in fence rows and other un-used land. The Largest specimens are 30' tall and 24-30" around but most are much smaller. They get little berries in the late summer, I've never tried them as I'm not sure they are edible. The bark is thin and peels...
Thank you wild west for your input. I've wrongly assumed that cooking/smoking slower was better. I'll look around again, I thought I saw a chart somewhere with suggested cooking temps for different meats.
