Thanks for all of the compliments. Just wanted to answer this question and say...No, the smoke flavor was not too intense. They were nice and smoky but in a perfect way. I am no a no-foil convert and if you haven't tried it yet, do it soon...you won't regret it.
Well, it had been way too long since I'd done ribs so I picked up a 3-pack of BB's from Costco. Plus, I really wanted to do some with no foil so I rubbed them up with Jeff's rub, tossed some Hickory and Apple chunks into the Big Block and smoked them for about 6 hours. I sprayed every 1.5...
Wow...great work. Those look delicious. I've been trying to figure out whether to get those the next time I'm at Costo...thanks for making the decision for me.
No, the meat really didn't taste sweet to me but it definitely held the rub on well which was what I was hoping for. Had some leftovers last night and it was still juicy and delicious.
Thanks for all of the compliments.
Very nice looking loin and ABTs...glad I have some leftovers for dinner from my first loin that i did yesterday. So would you highly recommend the mahogany sauce? I sauced mine with some of the juice collected in the foil while it was resting and that was great.
Bought a full loin at Costco and cut it in half. Put one piece in the freezer and decided to cook this one. After looking thru a bunch of posts, I decided to cover it in honey and then rub it up...I only had some steak/beef rub but I added some brown sugar to it and it seemed to work well...
Sorry...haven't smoked anything for a while so I'm a bit rusty. No bacon wrap and I'm not spritzing. The loin has a nice layer of fat so I think it'll stay moist. I'm smoking at a pretty constant 250 with a mix of hickory chunks and apple and cherry chips.
