    Looking at the barrels, they almost look like GAMO air rifles. 1200fps with the right pellets. They are gaining popularity for prairie dogs. Cheap to shoot and VERY effective.

    Lotta folks do precooked hams here, not many do FRESH hams. IMHO the ONLY wood to smoke a ham with is hickory. Good luck with it and post pics!

    No idea how many times this needs to be posted before everyone sees it , BUT.................. Folks, chicken is NOT a "low & slow" meat. Chicken needs to be cooked at higher temperature. I cook chicken at 350°F. on my smoker, I have seen some say they do it at 300°F, that should work fine...

    Posting this under pork, cause I think it mostly is. I smoked 2 cans of SPAM. If you have not tried it, don't knock it, it's good. Cut the SPAM into chunks. Threaded it on bamboo skewers with pieces of red, green & yellow pepper, pineapple, water chestnuts, sweet onion. Grilled the kabobs over...

    Smoked some Salmon

    Looks good! I smoked some salmon yesterday. Sprinkled with Paul Prudhomme's Seafood Magic and drizzled with honey. Smoked with apple. It was my first try with salmon and it turned out a bit drier than I like, but tasty. Just a timing thing. I love smoked salmon!

    Smokin Bologna

    I've been smoking bologna (baloney down where I come from) for years. I smoke these 1 lb. chubs of Frick's Balogna. No need to poke holes in it, they smoke just fine. Just be sure you remove any wrapper. I smoke them plain and sometimes sprinkle a little rub on them. These have rub.

    In Memphis they ask if you want your Q "wet or dry". They cook it dry, rub only. But sauce is always available if you want it wet.

    And it comes preloaded with wood! No apparent animal nests. Could use a fire grate fabbed up from 1/2" rebar. A trip to a sandblaster would probably not cost a lot and make a world of difference.

    Seared Brisket

    Here is a brisket we seared at Okie's ranch, "in process". Also the fire we seared it over. It is Mexican mesquite lump charcoal and burns hotter than any lump I've ever used.
