Tritip, Country Style Pork Shoulder Ribs, and Chicken Wings for tomorrow

OK, thanks. I was doing some searching through the forums last night and couldn't find anything definite but based on some posts had come to the conclusion they would take about 4-5 hours. I would have way overcooked them. haha

Lots of wook chips left over from my last smoke

My last smoke was my first smoke. I had the feeling towards the end that I was using too many wood chips. This morning I was getting the smoker ready for my smoke today and saw this when I pulled out the chip tray. Check out all the unburned chips. I guess that confirms my question that I was...

Tritip, Country Style Pork Shoulder Ribs, and Chicken Wings for tomorrow

I planned on smoking my first tritip tomorrow. When I picked up the tritip today I ended up also picking up some CSR pork ribs (small package of 3 just to try out) and then I also decided to get a package of chicken wings to try those out. What I'm not sure about is how long each will take so...

Where do you store your smoker, especially during the winter?

Thanks everyone for the response. I should have been more clear re: "where to store it between smoking" as I plan to smoke a lot this winter especially if everything on the job front goes as planned and I'm home more (I sometimes can travel a lot for work). Sounds like the unit should be OK with...

Where do you store your smoker, especially during the winter?

I have a 30" MES. I will be getting a cover for it next weekend. One of those that has the elastic on the bottom. I live in the central valley in California so we're pretty dry during the summer but we can get some rain during the winter. We don't get any snow. Would it be OK to store the MES...

a newbie question about the MES

Very informative thread. I just did my first smoke in my MES and by the end of the smoke was thinking I was putting in too many chips. I'll try the 7-10 range next time and may pick up some chunks so I can put one or two of those in after I get some hot coals from the first one or two sets of chips.

First Smoke - Dino Bones - QView

Did my first smoke today with my new MES. I went ahead and did beef ribs because I've been doing them in the oven a lot lately and they are one of the main reasons I wanted to get a smoker. Last night I rubbed them first with Worchestishire sauce then Lucille's Rib Rub. Wrapped them in...

My wife called me a freak today for taking pictures of my meat

So, I'm getting ready for my first smoke and getting the camera ready to take pictures (to come soon) and my wife asks "what's the camera for?" I tell her I'm going to take pictures of my progress with my first smoke and she goes on to tell me that I'm a freak for doing so. I laughed. I suppose...

    Member's Journals

Was thinking a member's journal forum would be kind of nice. This would be a place where we could all document each of our smokes so that not only could you go back and look at your own journal but other people could check it out to learn from it and/or provide feedback. Each member would have...

Just got a 30" MES for my birthday

Hi, thanks for the nice words and encouragement everyone. Funny dog story!!! I was out of town this week but got back today and fired up the MES for the preseason. I soaked the wood chips for a good 45 minutes but I noticed that they still flared up a little causing a lot of smoke for 10...

Barbecued Brisket and Burnt Ends (Recipe by Paul Kirk)

Sorry, newbie question. In the sentence below, what does the notation 11/2 mean? Flip the brisket and rotate it 90°. Spray with the mop again, cover and cook for 11/2 hours. Flip the brisket a final time and rotate it 180°. Spray with the mop, cover and cook for about 1 hour longer, or until an...

    Roy from Roseville, CA

Definitely in the "just learning" phase. In fact, just got my first smoker today for a birthday present. It is a 30" MES. I already have it put together but not preseasoned yet. Was a little too late to start that tonight. I look forward to learning from all the greats on this board.

Just got a 30" MES for my birthday

Hi Everyone, I'm new here. New to smoking. In fact, just got my first smoker for my birthday. It's a 30" MES. I'm so excited and looking forward to getting started smoking. Here's the rub, though. I'm going to be gone for a week. Ugh. All I'm going to think about is getting back and trying out...
