    wow I guess this is something new to this group, I will make sure I document the process.  I was just looking for some general proportions and curing times for small amounts.  I figured it would not take long to cure since it's so thin?

    mine does the same thing.  I routinely wipe the inside with a damp cloth.  After some seasons on her it won't be an issue anymore.  I store mine outside uncovered and it's still great on it's 3rd year.

    the more I look at it that is tilapia just do a search of tilapia fillet and you will see.

    that looks like tilapia not red snapper, I am a fish monger by trade. I could be wrong but seafood fraud is quite common.

    damn seals, I sell fish and our cod has more worms than ever before.  our ancestors kept them in check which resulted in substantial catches of target species.  At certain times of the year I can't even eat local cod, it has so many worms.

    get rid of the chip pan and use a cast iron pan, put brick on the bottom to raisethe pan and to help hold heat when you open the door.  Hmm what else.  get a remote therm.  Some guy have added needle valves but i didnt want to mess with the gas lines.
