You have to soak it and rinse when curing is complete. Then test fry a piece and see how you like it. Might have to soak some more.
Also you need to start off at a lower smoke temp and gradually step it up.

Congrats on the new pellet muncher. That Yoder is great cooker. The quality of the pellets you use makes a difference in the smoke flavor so while you're waiting you might want to research that. You're gonna love that thing.
If you want another option for set and forget consider a pellet cooker. You're still cooking with wood so you get your smoke ring if thats important to you. One of the beat values out there now is the CharGriller pellet muncher at Lowes for about $450. Lots of great reviews on this forum and...
Yeah, what J I said......we can help a bit more with a bit more info. If it didn't pass the probe test it wasn't ready. Also, the wrap and rest with a little liquid is as important as the cook itself. BTW.... I never wrapped a brisket before it was done in twenty years. And I haven't smoked...
