Number 2, how do you know you are cooking at 240 and what type of smoker you using?

Try a maverick dual probe therm. A great tool to have and very accurate. Have a feeling you needed more time in the cooker. Masterbuilt, and most other dial therms are pretty unreliable. Were u smoking bb's or st louis ribs?
Never seen the traeger off that much unless the temp sensor is bad or needs a good cleaning. May"be a bad connection or cut in the wire. If its cold and windy and you haven't put a gasket around the lid it will screw up temps also. Also have you cleaned out the firepot of ashes?
Because of the convection fan in the pellet cookers, the tube works much better than the tray. More smoke and longer lasting. I've tried both. For me it adds the perfect amount of smoke flavor. As far as pellets....BBQ Delite.

Actually you are correct....it is am issue with pellet cookers. Because of the efficiency of the pellets in producing heat, pellet eaters certainly don't produce as much smoke as other cookers, especially at higher heats. As discussed earlier, it is the reason why many folks, including myself...

Actually the hot rod goes thru the side of the firepot and is held by one screw. Very easy to swap out. And you don't need to order from Traeger. There are only a few hot rod sizes that are used by all pellet cookers. Theres a few American made ones that seem to last longer and can be had...
The hot rod is a unit that is in the pellet pot in the center bottom of your cooking chamber. As the auger (you call it the screw thing) pushes pellets into the pot the hot rod heats up to get the pellets going. Because of the intense heat of the pellet pot hot rods will fail.... on all pellet...

Sounds like you already diagnosed it. Sometimes its higher, sometimes its lower. You have the one where the controller reads 25 to 40 degrees higher than actual temp. The problem with that one is that you cannot smoke at temps higher than about 250 as when you set to the max setting of 275...
Don't know what type of smoker you use but the factory dial therms on most are usually not very accurate. The Mav tends to be very close. Do the boil / ice water test and you'll know.
Well, well..... the Gen 3 is here. Looks like they have taken out some of the lousy features that were in the gen 2 and put some back that worked perfectly fine in the gen 1. Water bowl, drip tray, vent, etc. If the controller is fairly accurate and reliable, I think they may have a winner...
