Looking good so far. I have a pork shoulder in the smoker since 6 this morning as well.
I already have the cole slaw made and stewing in it's own juices and am about to throw together some of Dutch's Wicked Baked Beans.
Debating whether that is enough or if I should throw some...
I have often wondered why we are encouraged to remove the silk from the corn prior to cooking.
I usually trim just the hairy end off and throw them in the smoker to "stew in their own juices". I kinda figure nature did such a wonderful job wrapping them so tightly, why mess with perfection...
Apple and alder is the way to go..... The alder gives a good smoke flavor while the blend of apple adds a nice subtle flavor to the fish. It tends to be a little more forgiving too if you smoke for too long.
Depeniding on the size / amount of the fillets.... watch your brine time as the fish...

Living in Alaska, I have had to make many compromises over the years but was astounded yesterday when I went to our local grocer to purchase a pork butt or shoulder for pulled pork this weekend only to discover the only thing available was one very small, and ugly looking piece of pork shoulder...

This looks simple enough and I like he fact that it makes enough for about a meal as I would prefer to make it fresh as opposed to proccessing large amounts and storing.... thanks I will give it a try.

I have not tried a pork butt yet but have one in the freezer (like planning ahead) for may be this weekend. You brought up a good point regarding the juices and it got me to thinking about placing a drip pan under the pork just before removing the butts just in case the foil rips..just a thought.
