Hi Greg And Laurie, glad you decided to come out from the shadows and join us. Welcome to the "Light Side". The bacon weave is not nearly as complicated as you would think. I find laying out a sheet of saran wrap help as I am able to move the whole weave around as I work and it also helps...

Sick Leave
I urgently needed a few days off work, but I knew the Boss would not allow me to take leave.
I thought that maybe if I acted 'Crazy' he would tell me to take a few days off.

Actually was not that bad.... Reg price was $2.69 p/lb but the picked it up on sale for $1.69 p/lb and charged me the same..... Tried talking him into more than just the two at tha price (was like buying 2 for the price of 1) but two was all he would part with.
$6.00 Per Pound? While food tends to be a little more expensive here in Alaska than other places in the U.S..... My family would stave at $6.00 per pound....LOL

You have gotten some great advice from some of the best minds on the SMF.
Follow their advice and you will be amazed at the results.
Just remember, smoking meat is an all day affair and cannot be rushed and the time spent around the backyard / smoker is time meant to be savored...
I experiemented yesterday and injected some apple juice mixed with some of the rub which brought some of the seasoning deep into the meat and it was plenty moist and tender, then foiled at 165 until it reached 200, then wrapped in a towel and tucked it into the cooler for an hour or so...
