    New guy here.

Welcome to the forums! I am pretty new myself.  Was the Giants game epiphany a couple weeks ago when the Boys pulled the victory?  As far as keeping your pork chops moist, you might try a slightly lower temp and then wrap in foil about halfway through the smoke.  Then, a little before you...

    HELP!! RIBS

Hi JoAnn, fellow smokin tex user here.  I guess i have been lucky with my unit as i have found the temp gauge to be pretty accurate, although in really cold weather i have noticed it takes alot longer to heat up.  my solution for getting consistent results out of it has been to use a probe...

Don, first of all don't lose hope!  I am a fellow single dude and often cook for myself.  I have smoked salmon twice in the smokintex and have cooked chicken several times with great results - it sounds to me like you could really benefit from a probe-style thermometer.  Here is what mine looks...

    This New Addiction

Hi Smoker, saw your post and thought I would offer my thoughts.  Have a good friend who runs a honey company in Waxahachie, TX and I am always using honey in the kitchen.  Have never heard of a maple-honey bbq sauce before but was intrigued by the thought and wanted to take a stab at it. The...

Hey Don!  Fellow smokintex user here.  Looking forward to hearing about your experiences with it!  I have really enjoyed mine, and it has fanned my smoking addiction (smoking food..haha) like a dry wind on a forest fire.  Happy to help if you have any questions about it! Kevin

Newbie from Virginia Beach, ...and I mean NEWBIE!

I would lick that cutting board if i could... greetings from Texas - spent four years in the Tidewater area, in Williamsburg.  Every time I headed east on 64 with friends from the area they'd crack the windows as we went through the bridge tunnel and smell that ocean air.  I miss it!  The ribs...

First attempt at smoked whole chickens

Looks so delicious!  Now that you have the first one under your belt, you can start putting your own mark on the classic smoked chicken!  I saw you had an onion on the grate below the chicken.  Good idea!  Have you thought about stuffing the cavity with vegetables, etc?  Sometimes I put a little...

    AP: DALLAS, TX.

The thing about Texas is, even if our cowboys have a down year, we're still Texan and you're still not, and that in and of itself suffices to settle the argument... Now, I just have to figure out a way to get out of Dallas...this place is overrun with folks who think they're in L.A....

    smoke in my eyes

If you have smoke in your eyes, just repeat out loud "I hate white rabbits, I hate white rabbits" and the smoke will quit blowing in your face.  An old trick i learned growing up around the campfire in the colorado rockies. I also soak for grilling but go dry for smoking.
