I agree with Dave. It wouldn't cost that much to build another one. A day project at most. Ideas are endless this this building. It would make a great smokehouse.
To keep it all the same, I used type S mortar for my complete build for a smoker. For my smoker I also used type S. I mixed it 1 part type S to 2 parts sand. A very strong mix.
I used the same mix for the firebrick. But, I kept my joints to 1/4in. max. A smoker doesn't get hot...
You did awesome! As the great one stated, there is a ribbon of fat across it. When it breaks open, just rack it out with your cleaver. I don't like it so I never serve it. I also trim my butts. I remove all the fat cap. I use the fat for sausage.

Well, broke down a bought the VacMaster Pro 350. Reviews looked really good. We just need something faster then our foodsaver. Most all our packing is 1lb. bags. Also got the rolls I need. Best I remember shipping is super fast, so I should have them by the 20th.

Leoric, the last picture you posted on your thread you were square on top. Did you step it down to a flue? If so, a simple chimney cap to fit the size of your flue liner. If you are still square at the top, I don't see why a roof wouldn't work, but there is a risk of fire. Like Dave...

The vents may be a bit small starting a smoke. Once you get the smoker up to temp, it won't be a problem
You shouldn't have any problems with them getting clogged. The ashes will fall...

Good evening. There are a couple different things you can use, but.... your firebrick will hold your heat.
I used regular fiberglass insulation between the oven and block. On a 10-12 hrs smoke, the only thing that gets warm is around the doors. Another option is you can fill the void...
