LOL!! I love a positive thinker. Only about a lb was pink. Yeah, I'm not throwing it out without a fight.
Talked with my butcher friend and she said she'd never seen it before. Her only concern was if the belly was good to start with...being I bought if from her.... :-)
Thanks...
Good to hear from you Dave. Hope all is well in your corner of the world.
At least mine is a pretty pink color. I haven't eaten any of the bacon yet, didn't even do a test fry. The honorable JJ said if it tasted good and smelt good to go for it. It smelled fine to me, but it was half...
Good evening friends,
I've been curing and creating bacon for several years now. I've never had this issue before. I want to be sure its ok before giving it to the family.
I use pops wet cure and have every since I started making bacon.
The issue is, I had a portion that was almost...
Looks awesome Ferdy!
Finally got a computer that works...
I can't stress enough to let your build cure for at least 30-45 days before putting any fire in it. Then start with small fires and work up over a couple weeks, before you run full temp.
Bama, sorry for the delay. My computer died and finally got around to another one.
The closest thing to a reverse flow and incorporate brick that I can come up with is a offset smoker. You could offset it as much as you wanted and not be in direct heat of the fire. I think, it would have...
I think we've highjacked this thread... sorry guys...
If you can find a fab shop in your area they should have a stock of what you need. No idea on cost.
Firebrick, Is there a local masonry supply close to you. ( A place of business that sells brick, block, sand etc ? Box stores are a rip...
Steve, I looked everywhere for doors. I finally had them custom built. I was lucky enough to have a brother who has a fab shop. No clue what it would cost to have it done.
Don't go cheap on the doors. Its the heart and soul of a brick smoker.
Gavlar, if you have a !/4 in. its enough. You just need room for the fire brick to expand and contract with the heat. You'll be fine.
You can always have your doors custom built. Lucky for me, my brother built mine. He has a fab shop and I didn't have to pay. If you have them custom...
A new found friend from Texas, who used to work at a Q joint in Texas gave me a brisket to smoke. He gave me some Texas rub too. Smoked over fire in my smoker, said it was the best he'd ever had. LOL, must be all the pork on the shelves that made it taste so good. :-) Yes, sir, I...
Just a thought. The brick work needs to cure for at least 30-45 days before you bring it up to smoker temp. If the masonry isn't cured, it will crack.
Awesome build! You won't be disappointed with the outcome.
Thanks Jim, I just want folks to have the best smoked anything that money can't buy.
I like your idea of a built in gap on the doors. My brother built mine. He built them 0 clearance. Sure, its not air tight, but hey!, I got a fire under it. Never had a heating issue. As long as smoke...
