Nice review. I would give the lumberjack pellets a whirl. I used pit boss from Lowe’s and they are bland and lots of ash, much better flavor with char hickory pellets.
So I did the same trip tip, same seasoning, same temp.....and went from Lumberjack Char Hickory to Traeger gourmet blend from Costco. Lumberjack had a significantly better “smoke” flavor, to me it was very noticeable.

Well now I’m sad....new Yoder ys640s is out with built in fireboard and WiFi grill controller....plus ceramic igniter.
Pisses me off since I just bought...hope they offer those that purchased in the last few weeks an upgrade option or two...
Looks good. Truth be told I would buy all flats if I could. The ones I have done the point has just been a mess of fat and I end up scrapping most of it or getting very little meat. So much waste from my experience off all of 5 briskets :)
The lumberjack char hickory I tried on my first Tri Tip was great! Guests commented on smoke flavor and I thought it was just enough to be there and not overwhelming the taste of the meat. I will keep using these or the pure hickory if I could find local. Up to this point I had no discerning...
Thanks Preacher. I will do this cook again and preferred to brisket. At 10.00 a pound its steep but no waste and easy to come off perfect! Char hickory lumber jack pellets gave it a perfect flavor. 10 out of 10 cook!
My 2 cents from multiple cooks is that the pit boss comp pellets, while really cheap at 14 bucks for 40 pounds, really produce a noticeable increase in ash deposits throughout the smoker which obviously get on the food as well.

Doing it on the Yoder 640. Good info on reverse sear and keeping it lower longer, think I’ll keep it simple for company’s sake in case I destroy it somehow...I’ll go maybe 200 range for a while then to get some more flavor. Thanks!
