I've been looking at curing salt to do my own seasoning.as for pork,i have not thought about it.but I'm looking into turkey as an alternative.
SmokinAl,i use eye round.slice it with the grain.
I've been using hi moutain jerky cure.but I'm looking into other recipes for different flavors.
I just finished a batch and the wife likes the flavor.
Oh,it was tasty.I did it in my Masterbuilt Sportsman Elite.at 275°,100° lower than the recipe called for.
