    Relatively Inexpensive Thermocouple Reader

not as fast acting but what I do is take T/C wire and twist the ends then weld the tip. For air temperature it works well enough, typically temperatures do not change that quickly except for the occasional gnat fart

    Thermostat questions

Trapper there is a company out there that does supply an inexpensive PID controller http://www.auberins.com/. What you are experiencing is the time it takes the heater to heat up and then heat the smoker. There is a time factor that results in your temperature swing. With a PID controller you...

    Fatty Question

You can always use the fattie mixed in with something else heated up too. Things like eggs, or chili, or well you get the idea. I have eaten a cold fatty but really tastes better warm in my opinion

    Wood suggestion for goose jerky

When I smoked mine I used Apple but I tend to use Apple or Cherry for just about every thing. In part because that is what I have and also because that is what I like.

    use of apple juice?

Instead of using it in a sprayer place it in a bowl and use it as a mop rather than a spray. This seems to work for me.

    Question About Electric smoker

Wiring in a temperature controller works well if you are having trouble keeping the temp steady when the unit is in need of maintaining temp. If wind is your issue a wind block is the answer For keeping temp steady after opening the door then the use of a water pan or fire bricks will help...

    New Braunfels Bandera Smoker

I have a Brinkman Smoke King Deluxe which is similar to the NB unit you mentioned. It is nice for placing a pan of water or juices in order to catch drippings, add flavor, and keep moisture in the meat. Unlike a horizontal unit you can not do that as easily. I originally got my unit to smoke...

SoFlaQuer's Finishing Sauce (For Pulled Pork)

One of the things that I noticed that if you leave it rest for extended periods of time the "heat" really kicks in. I always wondered how adding the red pepper flakes did not seem to make it too hot. However once left to sit in the mixture it does heat it up really nice.

    I found Juniper Berries...No what?

Give yourself the booze and the berries will not be as important. I have just added mine whole to brines and not smashed them. The other option would be to get something like cheese cloth place the berries in them then place that in a plastic bag use a big hammer and get angry at it If you...

Best smoker under $250 propane or electric?

With an electric unit it is difficult to get a nice crisp bark on anything. If that is what you desire then you may have to fire up the grill to do that part. Like mentioned before it is tough to get a smoke ring with an electric unit. But smoke rings are for looks you can not taste a...

Unfortunately I got sideswiped by the wife and kids for either a bichon or a West Highland Terrior. So now we have a nice West Highland Terrior and Cheech still has not received his Lang or permission to get one. I was told that before I get another smoker I have to get rid of one of the...

    Brisket for a baby shower

Welcome aboard, Couple of thoughts (even though I am getting to this thread late in the game) 1. If the temps are such that one side of the meat gets done faster you can make a diverter out of tin foil. Make a "screen" out of the foil and then place in the smoker to divert the heat before it...
