    This was today's lunch for the crew....  I took Poblano Peppers and stuffed with a mixture of Ricotta cheese, Chorizo, and Queso Fresco.

    Thanks...came out fork tender. Hardest part was the wind was coming out of the North East today and left the smoker pretty exposed to temp fluctuations, really tough to keep it in a 20 degree range
