Im a little worried its going to fast. I started at around 7:30ish and its 10:15 now im already at around 130 IT. Its been sitting around 250-275 should i cool it down a bit?
BTW i finally got the smoker into the shop for some much needed modifications! what do you guys think?
Tomorrow im smoking a pig butt and figured while i have the thing goin i might as well make lunch. So tri tip and stuffed bell peppers in on the menu.
Ive never done ABTs or smoked bells so i was wondering when to put them on to finish with the tip and what temp to pull them off at.

Ok in the oven finally starting to move up in temp. holy crap my house smells so good its killing me! this is suppose to be fore dinner tomorrow but im not sure how im gonna hold back from eating it as soon as its done.
