    If you spritz, plain ol' apple juice works and if you're worried about loosing heat, just keep the ribs on an extra 1/2 hour.

    Concrete smoker - anyone done it?

    I've cooked on home-made (usually south of the border) concrete smokers allot. They really know how to smoke meat down south. Another buddie has one at his house that's about 9,000 feet above sea level and was built around the early 1900's.  Still going strong.

    Smok'n on Monday: First attempt at butchering pork spareribs to St. Louis Ribs. 3 dozen ABTs Italian Sausages for lunch the following week Brewing on Sunday. Fishing on Saturday. Honey do's tomorrow.

    I think i have mastered spare ribs thanks to you fine people!!

    Never used foil until hooking up with this crowd. Has its advantages. Use foil if it gives you confidence.  Don't use it if it doesn't. Me, I'm on a foil kick.

    GOSM - Whers the smoke?

    First time I used my GOSM,  packed my wood box full with no luck. Now I just loosly fill it about 1/2 full, then check every hour or when smoke stops comming out of the top vent.  Remember Fire = fuel + heat + oxygen  If you're wood's not breathing O2, then you wont have combusion.

    This is the second time I've read of a grease fire on a new gasser. When you 'lube' the inside of the box, did you wipe up any excess 'lube'.  I noted a pool of Pam on the bottom of my GOSM when I cured it the first time.  Took about 1/2 dozen paper towels to get it all up.  Just a thought ...
