    I'm going to redesign the chimney a bit. And the fans will be on a quick detach base that will slide and lock onto the chimney. I will need to find a 120 v fan speed control. The fans also have plugs that connect the power leads to the fan motor, so I can easily disable one if 2 is too much...

    Well I thought about using it as a cooling system. Running an open loop of ice water. At least to cool the intake air. But it's agreed, too complicated. I took the heat exchanger apart yesterday and have a pretty good plan for the fans.

    Would think that 275 would have got you close. But perhaps try finishing in the oven at 325 to 350 next time. Hotter = crispier.

    What was your max temp? You probably need to get your heat up around 300 to 325 in order to crisp the skin. That goes for smoking any poultry. You can do it in the oven if your smoker doesn't get hot enough.
