    Not sure what u mean by meat probe? I have a 4" thermocouple hooked up to read smoker temp so the PID can properly enable/disable the burner but there is no meat probe. Curious what u mean? Can I get another probe and hook it up?

    Here is the revised schematic, thermocouple wires corrected and PID/SSR labeled with model numbers. BIG THANKS to Bamafan and Radioguy for all the advice.

    Also need to point out that my thermocouple was wired backwards!!! I was having issues getting the temp to read correctly and posted the dihlema in another thread. Ended up I needed to switched #4 and #5, the wires were backwards and are also backwards in my above drawing. I will update and post...

    No drain hole. So I need to get 2 nice 1/2 size cookie sheets. The plan is to set them on separate shelves and stager them so the smoke can weave through them and I have 100% coverage for drips. Right now for this first smoke I only have one salmon going and it fit on the 3 1/2 size grill racks...
