Venison Haunch
Well I had this haunch in the brine for 13 hrs, last night while I was sleeping. Dried it off and put a rub on it and stuck it in the smoker. Gonna leave it there for the rest of the day, well till 6 or 7 pm anyway. Brine was made up of; chili pepper oil, home made hot sauce, cayenne pepper... -

Advice with chicken required
I'm of the same opinion as those already expressed . The drip tray will definitely help. You might try spraying them every 20-30 minutes with some good apple juice, that way you can see if you're getting any flare ups and yur adding some nice colour and flavour to the bird and you won't need to...- gremlin

Yes sir it's real pretty up there . They call it 100,000 islands I think..........There are just so many. The 1000 islands are nice to.. I used to boat through there ...Alexandria Bay and up through the St Lawrence when we had the boat.- gremlin
