This is a great model. 270-280 seems like a high temperature for smoking - I love the outcome, but never went that high before. Does the high temp allow for the fat to render and to create a bark bark easier?
How do know when the ribs need to be braised?
So to be clear, once you put your ribs in the smoker- at 3 hours where you took them out to wrap in foil- you’re saying you wouldn’t do that again? I am looking for a nice bark myself. Wondering maybe temp at 250-ish?

im looking into buying a Weber Kettle original. This would have the guarded basket to collect the ashes. It does not have the hinged grill plate. I’ve never cooked on charcoal, but see that if I ever needed to add more coal/wood the hinged piece is convenient.

When you have the time can you tell me how you did it? Pork butt and especially brisket are life goals! I unfortunately cannot do anything with heat - so all rubs that have heat I have to eliminate . I love grilling and have no problem with putting the work in. I’m still a time guy with burgers...
Ordered pork ribs from my butcher. Mustard and a rub I tried from a local vendor. Had the masterbuilt up to 250 for 3-4 hours infusing mesquite and apple wood for smoke. In those 3-4 spritzing Apple cider vinegar. Then wrapping for another hour maybe 2.
Any advice? I’d love to try again.
