In almost every post I always see to take notes, so a few smokes ago that's what I started to do to help correct my screw ups or to make sure I can replicate what I did before. Thanks for all of the optimism, help and good advice guys.

They look great. I want to do ribs on my smoker but still nervous thinking I'm going to screw them up. And yes I know there is tons of good info on this site about how to cook them but for some reason still nervous, same thing about brisket. I don't want to make that tough or taste like crap so...
I agree this looks like a good idea that I am going to have to try next time I put something on the smoker. Which I think will actually be tonight when I get off work.
Yeah I love the site. I have found a lot of mods, help, recipes, and a lot of good ideas from others. Its also nice to get help from others that have the experience.
I wish I had taken more pictures when it was done, but the family was hungry and wanting it right then. Next time I will make sure I get more pictures, because I will definitely be doing this again. I even took some left over chops yesterday and cut them thin for a smoked pork chop sandwich...

Not sure if I am right in doing this but last time I smoked using my firebox smoker I put my apple wood chunks in when I put my hickory logs. I also checked every now and then and when the chunks were gone I threw a couple more in. Like I said not sure if I am wrong in the way I did this due to...

They look really good, I have done a lot of pickles that turned out good, but haven't done anything else yet. But my wife and I have been wanting to do beans and asparagus this summer and I think this post as helped push me to get going on it. Thanks for your post and pics.

Ok the meat loaf sounds good my brother made the meatloaf Jeff sent out in the news letter a few weeks ago. it was awesome. I think this is what I want to make when I get home from work tonight.
I have done chicken, hamburgers, and sausages by smoking them first then just throwing them on a hot grill to finish them off and give them the crisp skin.
