So I'm still very new to making sausage, hotdogs and the like. I've been searching for a while for a good all beef hotdog recipe to make for my kids that doesn't have many additives in it. Does anyone have any good ideas?

I'm still very new to smoking but the coldest I have smoked at here in WA is 30 degrees. My smoker did great after I set up a makeshift wall to stop the wind from hitting the smoker.
This looks awesome. I would love to be able to build my own smoke house, but still in process of buying my own house so its going to have to wait a little bit for now.

Question for you sir, I have the smokehouse salt cure, everyone says to use 1 tsp. per 5# but on this salt cure it calls for 1/3 of a tsp. per # so if I was to be doing 5 # of meat I would be going way over the recommended limit per #.

This is something I am looking forward to doing with my little girls also. I still have a few years to perfect this art since she's not even a year old yet but that's alright. Its good to see a father spending time with his daughter and teaching her.
