    Hello everyone

    I was under the impression that the water pan was there to control the temp of the burn as well.  When my temps start rising, I add some cooler (Not Cold) water & my temps come right down.  I think you should re-consider using less water.  Use a littler more water & maybe even try using cooler...

    You should do fine.  I have done the aluminum pan thng once before & that worked out so great.  But if you don't have the space, the rack should be fine.  But really, if you are going to continue to foil, try the pan at least once.  You may like it.   (Not speaking for anyone else.....) What...

    Non-smoked leg of lamb, with some pics

    Mary had a little lamb, little lamb, little lamb.  Mary had a little...............oh nevermind. It was going to end with something like, "And Moose smoked it so, LET'S EAT!!".  Anyway, the lamb looks good so far.

    The only time I know of that you don't want to close all of your vents, (The top one is the one we are really talking about here) is when you have product on the grill during your smoke.  I normally kill all my vents after I am done smoking to see if I can save any fuel for the next burn.  Good...

    Yeah, I am with Dave on this one.  I hear too many good things about the Amazin' Smoker to just blow it off.  My toy list is full right now so I can not purchase just yet but it is on my "To Get List" as soon as the boss approves my budget.  Good luck.  (Four freezers.  Huh.  I can only dream.)

    That looks like a steak that I would throw on the grill with some CBP & Garlic.  Smother some onions & some shrooms & you have dinner.  I like mine medium well but the quick sear may be the way to go.

    First attempt at ribs Q-view

    Good luck on the maiden rib voyage.  That bowl of tips can be of good use after you get your ribs off of the smoker.  If you get too tired, then throw them in the oven but I really, really recommend smoking them & then dropping them into some beans.  Your taste buds will love you for it.
