You can always use the fattie mixed in with something else heated up too. Things like eggs, or chili, or well you get the idea. I have eaten a cold fatty but really tastes better warm in my opinion
When I smoked mine I used Apple but I tend to use Apple or Cherry for just about every thing. In part because that is what I have and also because that is what I like.
Wiring in a temperature controller works well if you are having trouble keeping the temp steady when the unit is in need of maintaining temp.
If wind is your issue a wind block is the answer

I have a Brinkman Smoke King Deluxe which is similar to the NB unit you mentioned.
It is nice for placing a pan of water or juices in order to catch drippings, add flavor, and keep moisture in the meat. Unlike a horizontal unit you can not do that as easily.

One of the things that I noticed that if you leave it rest for extended periods of time the "heat" really kicks in. I always wondered how adding the red pepper flakes did not seem to make it too hot. However once left to sit in the mixture it does heat it up really nice.

Couple of thoughts (even though I am getting to this thread late in the game)
1. If the temps are such that one side of the meat gets done faster you can make a diverter out of tin foil. Make a "screen" out of the foil and then place in the smoker to divert the heat before it...
