On the cook I normally do the 3-2-1, but on the ribs I wanted more bark so I tin folded at 155F, removed and placed in the cooler to steam at 170F.

I have never tried Baby Back Ribs before and Patio Daddy O talked me in trying them and my spare ribs days will be few in between. Had some family members over for a fest the day before Easter and wanted to share the Qview with you.

My guess it would be 3/16" based on the size and if it is only 1/8", just increase the fire box to ensure you will be able to keep the heat for it. Good find and when you build it please share the pictures with us all.

Yes, this is a reverse smoker so I am using only one 4” stack. Because I am adding a cooking rack in the fire box for grilling, I have a stack on it too and will close it off when smoking.
