    11:30. Air temp is at 250. At 5hr. 45 min, we're at a meat temp of 150. So we're sittin' at the plateau. Looks like we're still about an hour ahead of schedule. Time to add some more wood chips to get a little flame going and button up the ole kettle for a while.
