I cut it off and also inject with Creole butter and apple juice (50/50 mix) the night before. I was watching Pit masters the other day all 3 contestants left the thick skin on.
I also decreased the size of my FB to CC opening and changed exhaust to be all the same size as the pipe welded in the CC. I do feel the inlet is to small so I run it with door open until temp comes up then shut door and adjust accordingly. I did trim inlet opening so it would be as big as it can be
My OKJLH takes a long time to warm up but once there it holds 225-250 easily. My tuning plates are gapless from FB to a little over half way across CC then have another plate with small gap and my pit temps hold less then 5 degrees difference from side to side. I tried putting small gaps all...
The plate with an angle next to fire box is welded in. I bolted it first but then figured since I have a welder just as well weld up the gaps. The other plates just lay in place.
If all grey in chimney the coals on bottom are pretty much done by the time you dump. I fill my FB basket with 10-12 lbs then fill chimney. Lite chimney let it burn for 15 minutes or so then dump.
