I had the honor of smoking for my nephews wedding, did pulled pork, fatties, ABT's a bean salad and a frozen fruit salad. That ended up being our gift to him. Smoked it all a week ahead of time and transported to Kentucky from the Indianapolis area the night before, my greatest regret, I...
I've been considering these mods for awhile, time to go buy the Nomex and RTV. I was going to seal around the bottome vent when I assembled the unit, but I could only get one of the screw out...Need a little more elbow grease I guess.
I rub all sides then into the smoker with as little disturbance as possible. I've tried sprizting / mopping and honestly cant tell a difference. If you use the 3-2-1 method you retain plenty of moisture during the braising phase, if anything I'll take the juice out of the foil wnd use that as...

That would certainly work. I do that with my pulled pork once I hit 165-170 I foil and finish in the oven. Works great. My brother who doesnt have a lot of time to smoke but when he does smokes a lot, foils them to the oven for 2 hours and then pulls them out, cools and freezes them. Then...
Definitely going to follow this post. I live in the Indy area as well and considering taking on a project soon. We have an old heating oil tank that needs a new home. Thinking an RF would be a good choice. Welcome aboard Bob.
Depending on how much pulled pork I'll use the crock pot with some apple juice. Or if it is quite a bit, I'll put the foil containers in the oven at 300 for about 30 minutes and then drop them into chaffing dishes for about 30 minutes which works great if you are using the standard half steam...
Yes there are lots of great people here. Life's too short to put others down when you should be spending time bettering yourself and your craft. Having said that, I just hope to live up to it in my life away from smoking :)
