    Thermometers or no thermometers

I also read Gary's book, and ignored his advise regarding not using thermometers.  I also ignore some of his other items, like lump being the only option, and him saying that you cannot smoke with electric or gas. Overall the book was good, but I threw out some of his advice, and have not...

    Best ribs yet!

Really nice! I like your spiral dogs.  When I first saw that idea, I thought that it was kind of a gimmick, but it really does make for a great tasting dog.  A lot more surface area to get crispy. It sounds like you put the dogs on the smoker, however?  I prefer to not use a smoker for dogs. ...

So Green getting WSM so many questions

Congrats!  I have a Napoleaon Apollo, which is basically the exact same smoker. I would use water.  Foil the pan and fill it completely.  Water is not necessary, but it helps to keep consistent temps. With your probes, you can go through the top vent if you want.  No problems there. I also...

OK to use Maverick 732 Food Probe to Monitor Cooker?

My cooker probe pooped out on me.  I ordered a replacement, but it might not be here in time for a cook tomorrow. I'm pretty sure that there is no problem, but are there any issues with clipping my food probe to the grate to monitor the cooker?  I'm doing ribs, so I won't need to monitor food...

Anyone Ever Try a Fatty Sandwich?

I used turkey bacon, thinking leaner.  But in all honesty, I wouldn't do this again.  It was OK, but the Turkey Bacon already has this artificial smokey flavor, and it just doesn't taste good period.  I pretty much peeled off the turkey bacon before eating.  Otherwise, pretty decent. ...

Anyone Ever Try a Fatty Sandwich?

I'm in the process of making my first fatties now. One is at 158, so it shoudn't be too much longer. One is a Chili-Cheese-Dog (dog, cheddar, onion, chili seasoning, mustard). The other is Buffalo Chicken (smoked chicken, blue cheese, onion, garlic, buffalo sauce). The meat wrap is 2/3 beef...

Maverick ET-72 as grill temperature thermometer

If you want to buy the little clip to attach the probe to your grate, you can buy them from Maverick's site for $3. Someone mentioned a potato, or you can simply ball up some aluminum foil around the base of the probe, this will also hold it steady.
