    I do a 20min cook in the beer/onion bath (indirect heat), then grill to desired color, then back into the bath for 5-10 mins under heat and reduce beer bath liquid.

    I do that for steaks (filet mignon) when camping. SV to med rare, remove from sv bath, into ice bath, then freezer. Reheat on grill and perfect med rare steaks camping. Campers around us always compliment the amazing smells coming from our grill.

    I made a double batch of meatballs this time. I'm hoping to vac seal what ever leftovers are left after my 10pm 2nd dinner. I may have to make my brisket Texas chili sooner than fall. The bag of brisket keeps eye balling me every time I open the freezer.

    OMG I'm stuffed! I haven't made meatballs in forever, let alone a sauce. The sauce was an 8hr cook/simmer, the meatballs were simmering in the sauce for about 4hrs after being cooked in the oven. I can't wait for my 10pm 2nd dinner!

    That's why I start mine at 8pm at 200*, wake up at 7am, and turn up to 250* until 170* IT. I had a plug installed outside near my smoker just for this reason.

    How far are you from Ohio or Indiana? I'm about 1.5-2hrs north of Ohio border. It may be worth the drive if in range. Or find a lisenced painter to get it for you.
